baked oatmeal.

i know, i know.  this blog is suffering from some serious neglect.  i apologize.  i'll try to do better, but can make no promises;)

my new favorite breakfast, mainly because you make it the night before and then pop it into the oven in the AM.  it's totally not labor intensive and keeps the kitchen clean first thing in the morning.  what else could you ask for?

1/2 cup veggie oil (or any oil or sub 1/4 cup of oil, 1/4 cup of apples sauce)
3/4 cup white sugar (or coconut sugar or maple syrup or honey)
2 eggs
1 cup buttermilk
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
3 cups of quick cooking oats (or 1/2 and 1/2 quick and old fashioned)

beat together oil and sugar, then mix in the eggs, buttermilk, salt, powder and soda and oatmeal.  beat well.  pour into a lightly greased pie pan and sprinkle with brown sugar and cinnamon.  refrigerate overnight.

wake up.  preheat the oven to 350 and bake for 35 minutes.

serve with milk.
